Most tissues are able to convert fatty acids to triacylglycerol (TGs); however, the liver and adipose tissue are the major producers of TAGs.

Adipose tissue

Adipose tissue is a specialised tissue that is suitable for the synthesis, storage, and hydrolysis of triacylglycerol (TAG). Triacylglycerols are stored in lipid vacuoles surrounded by the protein called perilipin (Figure 1).
