When we are thinking about lipids, we have to remember that water and oil can not be mixed (lipids are insoluble in water); this feature comes from the hydrophobic nature of the lipids.

We distinguish between two types of lipids based on what you will find in your kitchen:

  1. Solid (butter type)
  2. Liquid (oil type)

Most lipids contain, or are produced from, fatty acids. Lipids have a lot of crucial biological functions, which will be discussed in the upcoming lessons.
